Nothing beats the feeling of coming home after a long week, pour some red wine and make a tasty dinner! One of our favorite weekend dishes right now is pizza! A perfect way to celebrate the weekend.
Many can experience a swollen tummy when they eat regular pizza with a lot of crust. We therefore think you will be glad to hear that we came over an alternative version a year back. Crust made of “lomper”.
But what is lomper?
Lomper originates from Norway and looks a little like a tortilla. It’s a flat, soft pastry made from potatoes. In the old days they where eaten without anything on them, except on Sundays, then they were served with butter. Today they are used in many different dishes: as a dessert, filled with cinnamon, butter and sugar, or with hot dogs rolled in them, as wraps or pizza crust. The possibilities are endless. Either way, they are very tasty, a bit healthier and better for the stomach. A must try if you ever visit Norway, and if not, use tortillas instead.
(Choose whatever you like on your pizza, the ingredients below are just a suggestion)
Smear the tomato paste on the lompe/tortilla and add some oregano. Cut red onion, mushrooms and peppers into chunks and add this and the spinach on the pizza. Top with cheese and put in the oven on 180 degrees for about 10-12 minutes. Garnish with some salad.
